Use a rice polishing machine to grind each rice grain, and use 45% of the core white area to make sake.   A junmai daiginjo brewed with a white core, the more the core is polish, the more raw materials will be used, and cost more. Dassai 45% is an elementary version of Dassai.  It has fresh, like pears or apples amour and is easy to drink, can also be easily paired with casual meals.

A popular sake brewery located in Yamaguchi Prefecture, its popular name "Dassai" is well known to everyone. It specializes in brewing with "Yamada Nishiki", the king of sake rice. "Dassai" insists on producing only Daiginjo level sake. Most of Dassai's products are sweet and easy-to-drink sake, with a mellow aroma of wine and rice flavor. "Dassai" has become famous overseas in recent years. Its affordable price and high cost performance are the main reasons for its high popularity around the world.
