These were brewed using the traditional Yamahai method and carefully stored in the aging cellar of the Noguchi Naohiko Sake Institute, then blended in exquisite balance.The blending was handled by Mr. Seiichi Koshimizu, a blender hailed as a legend in the whisky industry.Noguchi Naohiko's sake is characterized by a brewing process perfectly suited for aging, which gives it a beautifully positive complexity. By combining multiple sakes of this nature, the complexity is further deepened, harmonizing the balance of umami, sweetness, and acidity to create a completely new flavor profile.
